The San Mai blade has a central 440C stainless steel, with high hardness of 59±1 Rockwell, and 410 stainless steel for the outer edges with good corrosion resistance. The hammered and acid etched TSUCHIME finish helps to release food easily while cutting. Stabilized Ironwood, natural Ironwood and brass spacer have been used to make the handle corrosion resistant.
